Spanish people get very upset when people do not make authentica Paella
Authentic Paella consists of Calespera rice, Rabbit, Mussels, Saffron, and a sofrito to bind.
This is specfically known as a Paella Valencia where the dish originates from.
This version can be as authentic or inauthetic as you desire.
Just remember to cook with a beer or wine
for personal consumption.
Getting Started
WE HAVE THE MEATS
First, heat selected pan with olive oil,
and heat stock in a small sauce pan.
Sautee onions and peppers until translucent, Add garlic
and stir not to burn garlic.
Add chicken thighs or rabbit, fry till golden brown.
Add tomato paste and stir to make a sofrito.
Toast rice in pan till golden and continue stirring so not to burn.
Use shrimp shells in stock to flavor the broth further. Pour liquid in
to the mixture in the pan
Bring to a boil and add shrimp and shellfish to cook. Shake pan to settle rice.
